Cereals and Foods: Quality, Processing and Product Development

Dr. Monisha Bhattacharya, Assistant Professor
Expertise/interest areas: Carbohydrate research, Improving quality of Hard Red Spring wheat-based products, including bakery goods and noodle products. Specific Current Research Projects
1. Genetic basis for wheat starch quality, including modified starches, as it affects pasting and textural characteristics in processed foods.
2. Defining quality requirements for existing products (bread, noodles and pasta) and exploring other niche markets (frozen dough/noodles, par-baked products).
3. Effect of amylose-amylopectin ratio on end-use quality. Identifying and establishing feasibility of end-use products for waxy wheat genotypes.
4. Starch - protein interaction in a dough system.

Expertise/interest areas: Food chemistry, value-added processing, nutrition of legumes (soybeans, navy, pinto beans, peas, lentils and chickpeas, etc) and other northern crops including sunflower, sugarbeet, and carrots. Flavor and sensory evaluation, nutrient analysis, fermentation, tofu, soymilk, natto, tempeh, soysauce, yuba, meat analog, canning, carotenes, pectin and protein extraction. Current projects:
1. Evaluating soybean quality for tofu and soymilk making as affected by .
2. Assessing the isoflavone content of soybeans.
3. Assessing the role of soybean in human health.
4. Evaluating processing methods for creating products from dry edible peas and beans.

Suranjan Panigrahi, Associate professor
Expertise/interest areas/examples of work/equipment/facility:
Identification, development and adapt ion of non-destructive and advanced sensors and sensing techniques for quality evaluation, inspection, and control. Use of computer-based advanced information technologies and sensors for automation and process control of different operations.
Previous work include the development of computer vision and sensors systems for quality evaluation of french fries, edible beans, and non-contact dynamic determination of protein content of grains, sugar content of sugar beets. Current work involves the development and evaluation of use of electronic nose for food quality and safety.
Bio-imaging and sensing center has state-of the-art infrastructure and equipment for computer vision systems, spectroscopic systems, GC-MS, video cameras, optical systems, electro-mechanical components, lenses, computers, computer programming languages, other intelligent tools such neural networks, image processing/analysis software etc.
